Deconstructed Cheeseburger Salad

This is a dinner that I like to throw together when we are all craving something healthy-ish, but don't want to still feel starved or like we missed out on anything substantial - which is a feeling I sometimes get if I'm just eating a boring salad for dinner.  This is basically a cheeseburger without the bun, and the whole family loves it, which makes it a winner in my book!


 

DECONSTRUCTED CHEESEBURGER SALAD
serves 4-6

INGREDIENTS FOR THE SALAD:

  •  1 1/2 lbs. 90% lean ground beef
  •  2 romaine hearts, chopped
  • 4-6 dill pickle spears, chopped
  • 1 cup diced red or white onion
  • 1 cup halved grape or cherry tomatoes
  • 1 cup shredded cheddar cheese
  • Sesame seeds (optional)

INGREDIENTS FOR DRESSING:
  • 1/2 cup of mayonnaise
  • 2 tsp yellow mustard
  • 2 tsp dill pickle juice
  • 2 TBSP ketchup
  • 1/2 tsp onion powder

DIRECTIONS:

-Brown the ground beef until cooked. Drain excess fat.
-In a small bowl, whisk dressing ingredients together.
-In a large bowl, toss together the romaine lettuce, pickles, onions and tomatoes; serve salad onto individual plates, topped with the ground beef and shredded cheese sprinkled on top.  Drizzle the mayo dressing and sprinkle sesame seeds on top.  Enjoy!
