Copycat P.F. Chang's Lettuce Wraps

I love the lettuce wraps at P.F. Chang's - but doing it yourself is SO much better.  This recipe is so easy and fast - you'll be able to enjoy these in less time than it would take to drive to a restaurant, sit down and order it!


 

I love the combination of every single ingredient - especially since I'm partial to crunchy onions along with garlic and ginger in pretty much anything.  I prefer ground chicken in this recipe, but I've also made this with ground turkey and it's also really good.

This is a great option for whipping something up in 15-20 minutes and when you want something light and healthy!

P.F.CHANG'S COPYCAT LETTUCE WRAPS
serves 6-8 lettuce wraps

INGREDIENTS
  • 1 tablespoon sesame oil + 2 teaspoons (divided)
  • 1 pound ground chicken (or turkey)
  • 1 medium onion, diced
  • 3-4 garlic cloves, minced
  • 2 tablespoons soy sauce
  • 2 teaspoons fresh ginger, minced
  • 1 tablespoon rice wine vinegar
  • 3 teaspoons sriracha sauce or sambal oelek (fresh chili paste)
  • 1 can (8 oz) sliced water chestnuts, drained and finely chopped
  • 1 small bunch of green onions, sliced
  • Iceberg, Bibb or Butter lettuce leaves, rinsed and drained
  • Chopped roasted peanuts (optional)
DIRECTIONS
  1.  In a medium skillet on medium heat, heat 1 tablespoon sesame oil.  Cook the ground chicken until cooked all the way through, breaking it up along the way into very small chunks.  Remove from heat.
  2. Mix in the onion, garlic, soy sauce, ginger, rice wine vinegar, and chili sauce of choice until thoroughly mixed and everything is coated.
  3. Add in the water chestnuts, green onions, 2 teaspoons of sesame oil and peanuts (if using).  Add kosher salt, to taste.  Serve on top of lettuce leaves OR with steamed rice and dipping sauce (like soy sauce, hoisin, sweet chili or spicy mustard).  Enjoy!
