Spiced Cauliflower Soup

It's finally feeling like fall here and this spiced cauliflower soup is perfect for it! Delicious, creamy and warming - I love making this because it's equal parts easy, delicious and my kids devour it. This soup disappears quickly in our house!

 


The first time I made cauliflower soup, I totally expected it to just be consumed by my lonesome self; my family can be picky and while my kids were great eaters as babies and toddlers, they are now developing into your typical "ew, I don't like that" big kids.  Sigh.

But color me surprised when they lapped up this soup and made frequent requests for me to make it several more times. Huh!  They won't eat mac 'n' cheese but they'll put down two bowls of cauliflower soup. Makes sense!

So here it is: super simple - really nothing to it - but just really gratifying in its own simplicity.  I use this smart stick to blend the florets and vegetables into a smooth texture.  If you like a chunkier soup, just blend lightly to your desired texture.


SPICED CAULIFLOWER SOUP

INGREDIENTS:

  • 1 head cauliflower, chopped into small florets
  • 2 whole carrots, diced
  • 2 stalks celery, diced
  • 1 small onion, diced
  • 2-3 cloves garlic, minced
  • 1 tablespoon garam masala
  • kosher salt and pepper, to taste
  • 4-6 cups vegetable or chicken stock
  • ½ cup heavy cream
  • ½ cup whole milk (or milk of choice)
DIRECTIONS:
  1.  In a large pot or Dutch oven, heat a tablespoon of olive oil on medium high heat.  Add the diced onions and minced garlic and cook for a minute until softened and fragrant.  Add the cauliflower and rest of the vegetables.  Add the garam masala and a little kosher salt and pepper.  You can add more salt to your desired taste later. Cook until vegetables are slightly softened, around 5-10 minutes.
  2. Add the stock and turn heat up to high until boiling, then lower to a simmer and partially cover the pot.  Let it simmer for 15-20 minutes, or until all the vegetables are tender.
  3. Add the cream and milk and stir until well blended.  If you have an immersion blender, pulse the vegetables until everything is smooth.  You can also blend everything in a blender in sections.  
  4. Serve with crusty rustic bread and a green salad and enjoy!!
