Broccoli Salad

 


When I was a kid, anytime we were invited to some potluck or summer party my mom would bring broccoli salad.  Summertime was the only time I got to have it! Although I am one of the weird ones who have always loved broccoli in any form, I am almost certain this salad could lure even a broccoli-hater (like my son, who did try this once he heard there was bacon in it).

My mom included raisins, bacon and diced pepper, and that's how I always remembered it which is why I've included it in this recipe. You can swap raisins for dried cranberries or grapes, omit or add different color bell peppers...whatever suits you!

BROCCOLI SALAD
serves 4-6 as a side

INGREDIENTS:
  • 2 broccoli crowns, chopped finely (I practically mince them)
  • ½ cup raisins
  • ¼ cup red onion, finely diced
  • ½ a bell pepper, finely diced
  • ¼ cup sunflower seed kernels
  • 1 cup bacon, crumbled or chopped in bite-size pieces
FOR THE DRESSING:
  •  1 cup mayonnaise
  • 3 tablespoons apple cider vinegar
  • 3 tablespoons sugar
DIRECTIONS:
  1.  Whisk the mayo, vinegar and sugar together until combined.
  2. In a large bowl, combine the broccoli, raisins, red onion, pepper, sunflower seeds and bacon. Pour the dressing over and mix well.  Cover with saran wrap and refrigerate for at least an hour before serving.  Enjoy!
