Marvelous Morning Muffins

These Marvelous Morning muffins have the perfect balance of sweet and good-for-you ingredients, so there is minimal guilt in having one (or two or three) of these with your morning coffee!


 I love a good breakfast muffin because it's the perfect way to sneak in ingredients that my kids otherwise will not touch...like carrots, zucchini or raisins (yes, one child hates raisins on their own). Baking fruits and veggies into a sweet treat camouflages them more, so it's a win-win for everyone:)

MARVELOUS MORNING MUFFINS
makes approximately 1 dozen muffins (double this recipe for more!)

INGREDIENTS:
  •  1½ cups all purpose flour
  • 1 cup quick cook oats
  • ½ cup brown sugar
  • 1 tablespoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ cup raisins
  • 1 8 ounce can crushed pineapple in juice
  • ½ cup shredded carrots
  • ½ cup milk
  • 5 tablespoons unsalted butter, melted
  • 1 egg, slightly beaten
DIRECTIONS:
  1.   Preheat oven to 400ยบ. Line muffin tin with 12 muffin cups
  2. Combine the dry ingredients and whisk;  add raisins, pineapple and juice, carrots, milk, butter and egg and mix with a rubber spatula with the dry ingredients until dry ingredients are moistened.
  3. Fill muffin cups to the top and bake for 20-22 minutes or until golden brown. Cool for 10 minutes before removing from the tin.  Enjoy!
