Fudgy Brownie Bites

These brownie bites are perfect for when you have a craving for something indulgent and chocolatey, but don't want to have to consume a normal sized brownie or bar.  It's basically guilt-free:)
I love that they're small AND can be made in around or under 20 minutes.  These are also the perfect Valentine's Day treat! Enjoy them alone, or crumbled up on top of some vanilla ice cream with all the fixings!



 

FUDGY BROWNIE BITES
makes around 20-22 individual bites

INGREDIENTS:
  • 10 tablespoons unsalted butter
  • 1 cup white sugar
  • 1 cup unsweetened cocoa powder
  • ½ teaspoon kosher salt
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • ½ cup all purpose flour
  • ½ cup semi sweet chocolate chips
DIRECTIONS:
  1. Set the oven to 350ยบ F and spray a mini cupcake tin with nonstick spray.
  2. Melt the butter in a medium pot or saucepan. Once melted, add the sugar, cocoa powder and salt and mix until just combined.  Remove from the heat and let it cool for a few minutes.
  3. Once cooled, whisk the vanilla extract, eggs, AP flour and chocolate chips into the cocoa mixture.  Using a spoon or a cookie scoop (I find the cookie scoop less messy and easier for dropping the batter in), scoop the mixture into the mini tins and bake for 12-15 minutes.  Use a knife to run along the edges and lift each brownie out of the pan.  Let them cool for a few minutes before devouring.
